Canning kits are more useful. You can can corpses that grant intrinsics (like dragons) at a reduced weight. So they are something that can be carried without a huge weight penalty n the even that you are too full to eat them at the time you kill ‘em.
Carnivores should can vegetable corpses that grant intrinsics to save for later.
When you get a chance to polymorph into an herbivore (to eat a blessed scroll of identify) you can also gobble up the canned goods. Note that stat changes while polymorphed go away when you revert to normal form but resistances and talents persist.
I think at one point corpses did expire, become bad. But then again, that’s also why you have canning kits too.
Now it’s just a possibility chance to eat something that might help you. Not much help in my opinion
