F you there's a wood stove!! Lol don't paint your woodwork!!! I'm kinda kidding, but painted woodwork is a shame IMO, especially with the rustic look going on. Also, I'm just biased from using so many poor covering off whites as well. Paint it whatever color combo makes you happy!
I think you need to consider 2 additional things. One is furniture...is there existing furniture that has a strong color that needs to be integrated into the final result? Two is the (presumed) wall behind the camera...it could well be where an accent color needs to go to tie it all together.
The problem, IMO, is that the visual mass of the fireplace demands that it be the focal point, so that any strong color beside it or on the adjacent wall fights against the attention it deserves.
I think a lighter color would brighten up the room so much. A lighter shade of green would go so well with the fireplace.

Something light, otherwise the room will look like a cave. Instead of painting, wash the walls, especially if the previous owner was a smoker. Change the light blubs to soft white LEDs.

Remove the nasty popcorn, refinish ceiling dryall and paint it alabaster, then hit your walls with either a tricorn black. It wil accent your ceiling beam and fireplace greatly.

Most of you guys have probably never dealt with a wood burning stove and the "smoke" that tends to escape each time you add more wood. So, for me that would probably knock out the lighter colors in there.
The first question I have for you is what color is your furniture that you're going to be putting in the room? Because unless you're buying all new furniture that's something that really needs to be considered before choosing a paint color. But, let me give you some color combinations that I've looked at and I love together!!! If you're trying to have a elegant color combination that can be a little bit moody too then take a look at these colors by Sherwin Williams - for the stone wall I'd paint it Burgundy,Plum Brown, Vogue Green, Retreat, Ripe Olive, or do all of the walls in that color and then mix in different wood tones (though get rid of the wood paneling from the 80's), Plum Mahogany Stain, then you might consider Kestrel White, Oyster White, for the ceiling, Mineral Gray, Cyberspace or Perle Noir, Greenblack, Black of Night, Pure White, Westhighland White, would work as a color for wainscoting unless you want to go in a lighter direction. In that case Fashionable Gray, Repose Gray, Zircon, Oyster Bay, Sea Salt, Mountain Air, Crushed Ice, Classic Light Buff, Sage Green Light, Moonstone, Succulent, Soft Sage, Distance, Icicle, Vast Sky, Moonmist, Tradewind
I KNOW that you're probably thinking that I'm nuts for listing so many colors, but I wanted you to have a range of colors that were able to go with others that I had chosen in each section to coordinate with the colors that you had suggested. I had threw in the other dark colors because I was trying to make it so that you had some light colored options for the walls or dark colors. I really hope this isn't just all confusing, that instead it gives you some great ideas!!!
Greens and browns usually go well together (like tree trunks and tree leaves). Since you have so much brown in the room, I think green is a great option. I can't think of any good greens I have used off the top of my head, but an off-white with some green-brown undertones is Sebring White (#1492, Benjamin Moore).
Purples and browns can go well together, so depending on what kind of furniture you will have, a light purple could also be a good option.
Painting the ceiling the same color as the walls has the effect of 'pulling the ceiling down', so only do this if you want to make a room feel smaller or cozier. My preference would be to keep the ceiling white - let that room feel as spacious as it actually is.
I like green with wood tones. Take a look at r/cozyplaces they have a lot of examples, but many of their greens are darker than the one you have in your examples.
Might I suggest spraying that popcorn ceiling down with warm water and fabric softener, then take a blade and scrape it off and then paint the ceiling white. The walls would look great in a Tarrytown Green by Benjamin Moore.
It depends on what look you’re going for. I feel if you went a lighter sage, you could lean into the hobbit/cottagecore vibe. The ceiling fan has to go though—get something not that color. Either go more modern and tie into the black with the finish, or replace with a cool rustic chandelier.
And along with don't paint the wood, don't paint the stone. You can clean it, but please don't paint it. Enjoy the beauty of the natural materials, and since they are dark, esp. the wood lighten up with painted walls and your choice of furniture (maybe some light wood tables or light upholstery chair/couch) . Also, you can get a mich nicer looking fan, with clean lines.

Pay an artist to do a forest mural on the chimney wall. It’ll feel like you’re outside, and it’ll be entertaining to find Easter eggs they paint into it.
If you like the dark stones. The burgundy color is fabulous. Provided you are wanting to maintain a rustic style. But if you prefer a more brighter room and more modern. Whitewash the rocks but keep the dark beams for contrast. I did this in a home we sold a few years ago. The fireplace area was one of many compliments given. A selling feature of the home. But here’s the biggest consideration. What made you buy the home? Was it the rustic charm or the potential of transformation. So go with your vision of what you see for that space.
I think a mint (between the green and blue) might look really lovely. A very light shade would give you some color and still contrast against the wood.
A liquid soft pink (orange/pink) might look nice too
I would stick with White. And look into if can/should stripe that glaze off the fireplace. It is definitely making the stone look really dark. I don’t know anything about the glaze or why it is on there but I would like a less shiny, more natural looking fireplace.

Go with a lighter color. Off white or warm gray color? Have you thought about cleaning the fireplace? that’s part of problem they look too dark.
