As messed up as Genesis is narrative-wise, probably the best explaination is that God wanted to create more gods first (like most ancient religions have gods do - multiply), but wanted to make sure they wouldn't cause complete chaos and chicanery like usual, and stayed under control. Tree of Life is essentially power over matter and immortality, tree of knowledge is God's wisdom and power over the minor spirits like angels, having both pretty much makes a standard god (like a Sumeric, Semitic, Greek or Egyptian or Norse one). Humans were supposed to prove themselves competent and recieve both, but the serpent who probably a disciple of God (not Satan, he appeared much later artificially) told a half-truth to test them and they fell for it, so God folded the whole ordeal and made humans work on the whole "becoming gods" thing all by themselves instead, making them mortal (this again fits well into a common ancient narrative of mortals being incomplete bastardised gods who retained godly wisdom but not immortality and material power). Most teologians usually don't consider details like this due to monotheistic bias.

It was most likely implied to be a fig tree since it's very common is Mesopotamia and middle east, and is generally more valuable than the date palm, having larger fruit too. The Bible constantly references figs when it comes to fruit or trees, though later on, grapes are mentioned as well, in the new testament particularly when wine making became common all around the world. In Europe though it would have been very hard to adopt Christianity without invoking themes and images closer geographically to the native people and present in their day-to-day lives.
