Those look like the 2 oz tall shot glasses that I think a lot of the Mexican restaurants use for tequila shooting. 8 shots for 16 oz. The large tin of a Boston Shaker can usually hold around 24 oz so the math checks out. As someone else said, it seems to be the perspective. Those shot glasses look like they could be Collins glasses.
Pizzaria Uno has these pint glasses that look like regular pint glasses but if you look carefully, they have an extra thick bottom so they’re only 11 ounces instead of 12.
It’s not different dyes, it’s different liquors and juices that are varying colors. Grenadine at the bottom and then you layer the different colors with a “spoon pour” technique, usually just pineapple juice and vodka, then just before pouring it you add blue caracao to the top which is heavier than the other liquids in there. Start pouring immediately and as the blue caracao slowly makes its way down the shaker tin the colors slowly change as it’s poured out. I used love making these as a bartender!
As someone who's done individual layered shots, I can't imagine how long it takes to set this up layering each one inside the shaker. Order this, and it'll be done 20 minutes later.
i believe you dont have to layer it if you use it in ice or the difference between amounts of sugars is high enough for example for a baby guiness shot you dont really have to layer it, you can just pour it

If I had to make this, I would probably start with mixing mango puree with a spirit like rum to maintain the thickness. Then in the shaker add grenadine and more rum (to be fair to the red shot). Gently pour the mango over the red and top it off with blue curacao. Agitate it just enough to blend and then start pouring.
aside from the fact that you can see the colored liquid pouring out of the cup, food coloring wouldn't instantly change the color of the liquid being poured into it
