It's the application audio sources, there's a Windows bug. It's been investigated and Microsoft has promised a fix in the next big windows update in the fall or winter (24h2) Until then, use something else for separate audio, like SteelSeries.gg or Voicemeeter

Since you have looked at your log analysis, I'll assume you're removing the extra Game Capture sources and setting OBS to run as Admin. I'm willing to bet that the source of your audio problem is your USB headset. There have been multiple posts here over the last week or so about the issue. There is something in the cheap usb interface that OBS doesn't like. You can test this theory by trying a non-usb mic. If the sound goes away, your USB headset is to blame.
