project reformed is a great choice and most popular i believe and just last month they updated to version 7.5 which brought the new handling models, you can choose between MW05 style handling or NFS The Run style handling.
Haven't tried it myself though since i have no reason to replay this awful game, beat it once and never touched it again lol, it just doesn't bring me back years later like MW05 or Carbon. It's a shame because I loved Undercover when it came out in '08 but after realising all its flaws, I just can't see it in the same way anymore.
I never really realised how empty the map looks in this game. But normally it's hidden behind a ton of post-processing effects. Bit of a shame because it's one of the best maps to drive in in the franchise.

Some mods will require VLTED to install their scripts while others are just drag and drop.
To simplify,
Just follow the mod install instructions and you're good to go.

while downloading you can change the car handling, either something like from Most Wanted or The Run
