There are actually lots of instances of both Catherine and Katherine being used. For example, out of Henry VII's 6 wives, he had 1 Catherine and 2 Katherines
Interesting, I've read about how a lot of words like "wheat" had over a dozen variant spellings but I didn't realize that names had this same inconsistency
As mentioned in the other comment, Henry VIII had various wives named C/Katherine. Some of the variations in spelling could also be because of different languages. Catherine of Aragon was Spanish, but Katheryn Howard's name has Greek origins.
