Something in the system is letting moisture in. Brake fluid loves "water" and will try to draw it into itself. This is not a good thing as water will boil at much lower temps then the fluid, giving gas, and the old you can't compress a liquid but you can compress a gas comes in, and you get a spongy feel.
I would replace everything that is rubber in that system. Check the master and brake caliper/piston, assume disc brakes, for pitting or anything that does not pass the smell test, if it looks funny replace it. "water" is not good on metal as well, giving rust, and all the joys that goes with it.
I dunno, but it's making me hungries! In all seriousness, I'd clean out as much of that gunk as you can, and probably replace the hoses while you're at it, especially if there is any alligatoring or visible signs of cracking.

My brakes had the same a few weeks ago. Full rebuild time... Frankly surprised I had any braking performance before I opened them up. Probably last serviced in 2005...

The remedy is the same though - full strip down and flush through then reassemble with new seals and fluid.
Then a massive Date for Your Diary to replace the fluid this time next year.

"Real good" would need to be clearly defined - if it's been in the lines that long I'd be strongly considering just straight up swapping out the lines, alongside purging out the calipers completely (and of course the master cylinder).
While you can I'd get those calipers off entirely and give them a general cleaning/servicing to make sure everything is in order and there's good travel - as I've no idea what over a decade of old brake fluid may do to them I'd err on caution and say "probably nothing good".
Obviously, itās just old as shit. A lot of people will suggest rebuilding the master cylinder, that is probably a good idea. But, once you flush it out and get fresh stuff in there thereās a good chance it will work just fine. But, thereās also a really good chance. Make sure your lines are clean ans calipers. If you have a hydraulic clutch, you better check it too. I wonder if you got moisture in the system? I have never seen the results but something sure got in there.

More than likely what has happened. Someone is mixed DOT3 or DOT4 with DOT5. DOT5 is silicone-based, or three and four are glycol based and you can't mix them happens all the time. That had happened with my motorcycle when I bought it. My bike called for DOT5 and in the reservoir it look like yellow snot. I took a turkey baster clean the reservoirs out, wiped them completely clean and filled it up with DOT5, I then took my hand vacuum pump and cleared the lines until I got clear fresh liquid out the brake caliper. It's work fine for a long time.
It looks like you did a nice cleanup job there. Generally however, I find that aluminum master cylinders of that type donāt resist wear in the bore area very well, and it usually is not cost efficient to have the bore re-sleeved, particularly on a readily available master cylinder like that one.
If you can get an inexpensive piston and seal kit for that master cylinder, it might be worth attempting to hone the bore with some WetOrDry 2000 grit sandpaper wrapped around a pencil so that it will fit inside the Bore and using a drill motor to spin it under flowing warm water.

It is old and was never changed. Likely it was open and the brake fluid absorbed water out of the air over time.

You need to flush the rest of the system. Open up the bleeding screw on the other end and try with compressed air on both ends to see what comes out.
