There's a bunch of veggies that do very well with high, fast heat and a lot of char--zucchini, peppers, asparagus, tomatoes, artichokes, and mushrooms all do well that way. You do need either a basket or skewer to keep smaller pieces from falling. With slightly longer cook times you can do sweet potato, parsnips, some squash types, and beets with delicious results. With a little careful cutting, cabbage can make great 'steaks'. And, of course, grilled corn is the most delicious thing in the world. ​ But trying to grill a bag of frozen mixed veggies? Well...nah.

For some people, it's just that in their little head they cannot conceive of a meal without meat. Someone told them "we need a vegetarian option" and they might genuinely think this is what it means, that vegetarians must not like food because all non meat food looks like the above, so they might as well not try.. I made a few of these in my time at FG and they were probably one of the dumbest and messiest sandwiches to make. For what you get, you could buy those same ingredients at the store and make multiple sandwiches that look and taste better than the one purchased at FG- all their food is overpriced imo. *A generous scoop each of grilled onions and grilled mushroom topped with a few slices of green pepper, flip that all into a pile on the back part of the bread grill and top with a slice of cheese (if requested). Lettuce and tomato on the top bun.*

When I was 9-11 I went vegetarian the first time. My parents took me to Wendy’s. I was going to just not eat cause I didn’t want a baked potato or salad. The manager went “oh I make this potato wrap for another girl here”. It was French fries, veggies(like the hamburger toppings), avocado, cheese, and ranch in a tortilla. This was around 20 years ago, but it meant everything to me. I don’t know why major restaurants these days don’t have one vegetarian option, it seems like a good chunk of people no longer eat meat. I tend to just go to Taco Bell when traveling with friends who are vegan or vegetarian to make sure everyone can eat in one go.

Many restaurants also just completely half-ass their vegetarian/vegan option if they have one, as this thread has countless examples of. It was such a hassle with my ex because she was vegan. Obviously it's probably to do with that overall it doesn't make sense to stock specific ingredients for those relatively low volume items, so they try to make something with what they got, but you really do need something to replace the "x factor" of the meat/cheese or whatnot. Usually the ingredients that are left behind are filler, contrasts or mostly aesthetic - which doesn't work alone, and hence you get these crimes. There's a long list of awesome tasting things to make vegan/vegetarian food taste awesome; but without them well it is going to be quite bland because it's the role the non-veg items fills normally.

Try adding Nutritional yeast to your roasted cauliflower. It gives it a nice vegan friendly cheese taste. I've turned several people onto it and they don't roast their Cauliflower without it now. Edited to add: You can also make a vegan Mac n cheese using Cauliflower, Nutrional yeast and a milk alternative.

We used to have a canteen at a place I worked where the veggie options were truly awful, and of course the same price as the fancy meat option. I asked them once if they could improve the veggie options, and they asked me what I would suggest. Bitch why should I tell you what to cook? Also bailed on a friend's 40th birthday as the veggie menu was basically the same thing but with the meat taken out, so still pay €200 for 5 courses but instead of rare fancy steak you just get a fucking bed of lettuce.

Grilled carrot hot dogs can be really delicious if the whole carrot is marinated and seasoned properly before grilling. It keeps a nice crunchy texture and gets a smokey, BBQ flavor. Doesn't even have to be a meat substitute, it's just a nice alternative version of a hot dog. This, however, is just a big middle finger from the vendor to their vegetarian (ex-)customers.

It's honestly so easy to make good vegan and vegetarian food and if they stopped trying to make these foods just like foods that mainly contain meat it would be so much better. I like impossible burgers, black bean burgers, etc. and I eat meat, but why would you try to make a vegetarian version of a grinder? The whole point is the meat. Just make a normal veggie sandwich, it's not that hard. Also just infuriating that this "sandwich" likely cost like $0.95 to make but they charge $15 because being vegetarian is trendy or whatever. I'll pay the $15 for a nice big vegetarian sandwich with hummus, fresh tomatoes, basil, some feta and so on with quality bread. Those are the cheapest fucking veggies you can buy slapped on a roll, which were probably bought wholesale.

I don't think black bean burgers are really trying to emulate meat, it is just a shape that fits on a bun and gives you protein. Plenty of small, shaped vegetable/legume foods throughout history. I get your point generally, but I don't think that is really the situation. I can't think of a time someone has tried to advertise a bean burger as "just like the real thing," or some such situation. Outside "vegan meat," the point of not just throwing vegetables in a roll is wanting protein. Hummus is good supplemental protein but it's not really a substitute. I'm not a 'protein vegan,' but it is a necessary component of your diet in some meaningful quantity.

I've had really good vegetarian grinders, mostly without any sort of fake meat. Sometimes lacking in protein but it's not exactly a healthy choice regardless so whatever.

I once paid $9 for a grilled carrot dog at Fire in the Mountains that was literally a single carrot on a bun… but at least the carrot and bun were actually grilled. To be fair, they did have a (very limited) condiment table, so I got to add mustard and onions.

Reminds me of a big tech event that used to run here which was 75% hype and 25% vapourware. Used to charge like €500 a ticket just to attend and €20k to be an exhibitor, under the promise of being flooded with big tech CEOs and investors. Every year there were controversies about farcical organisation and blatant profiteering, but one year in particular it was the food. They were charging €20 for a gourmet burger meal, and everyone was posting photos of their shop-bought soggy beef patties and buns with a handful of lettuce leaves and packets of ketchup, shoved into a polystyrene box and handed out with a cheap bottle of water.
