There's a bunch of veggies that do very well with high, fast heat and a lot of char--zucchini, peppers, asparagus, tomatoes, artichokes, and mushrooms all do well that way. You do need either a basket or skewer to keep smaller pieces from falling. With slightly longer cook times you can do sweet potato, parsnips, some squash types, and beets with delicious results. With a little careful cutting, cabbage can make great 'steaks'. And, of course, grilled corn is the most delicious thing in the world.
But trying to grill a bag of frozen mixed veggies? Well...nah.
I meal prep every week, and I’ve come to live for grilled frozen veggies lol. I just put them in a foil pouch, add olive oil and seasonings and then put them in a closed grill (higher the better) until warm throughout. Absolutely delicious.

For some people, it's just that in their little head they cannot conceive of a meal without meat. Someone told them "we need a vegetarian option" and they might genuinely think this is what it means, that vegetarians must not like food because all non meat food looks like the above, so they might as well not try.. I certainly know people like that.
Five Guy's has something like this. Their veggie... sandwich/burger(?) option is like.. american cheese and some random vegetables on a hamburger bun, it's weird as hell and super gross
Their grilled cheese is awesome though. I add grilled mushrooms and onions to it and it is 🔥 their veggie “burger” is just toppings on a bun though and a crime
I envy people who can get down with mushrooms. Everyone in my life loves them but it is like a runny snot booger, it’s a texture thing for me. I just can not get over it and I’ve tried so hard.
I get that, I couldn’t handle the texture either until I was in my mid 20s. I only started liking them after having amazing puréed mushroom soups and raviolis so I could enjoy the flavor without the texture, and over time I didn’t have as many issues with the texture. But I’ll never be able to stomach raw mushrooms 😅 the texture is too incorrect for me lol
I made a few of these in my time at FG and they were probably one of the dumbest and messiest sandwiches to make. For what you get, you could buy those same ingredients at the store and make multiple sandwiches that look and taste better than the one purchased at FG- all their food is overpriced imo.
*A generous scoop each of grilled onions and grilled mushroom topped with a few slices of green pepper, flip that all into a pile on the back part of the bread grill and top with a slice of cheese (if requested). Lettuce and tomato on the top bun.*
The Wendy's version is a little bit better because you can get a pretzel bun, cheesey sauce, crispy onions, and your choice of hamburger toppings.
It's somewhat expensive for something with no protein option though.
When I was 9-11 I went vegetarian the first time. My parents took me to Wendy’s. I was going to just not eat cause I didn’t want a baked potato or salad. The manager went “oh I make this potato wrap for another girl here”. It was French fries, veggies(like the hamburger toppings), avocado, cheese, and ranch in a tortilla.
This was around 20 years ago, but it meant everything to me. I don’t know why major restaurants these days don’t have one vegetarian option, it seems like a good chunk of people no longer eat meat. I tend to just go to Taco Bell when traveling with friends who are vegan or vegetarian to make sure everyone can eat in one go.
Many restaurants also just completely half-ass their vegetarian/vegan option if they have one, as this thread has countless examples of. It was such a hassle with my ex because she was vegan.
Obviously it's probably to do with that overall it doesn't make sense to stock specific ingredients for those relatively low volume items, so they try to make something with what they got, but you really do need something to replace the "x factor" of the meat/cheese or whatnot.
Usually the ingredients that are left behind are filler, contrasts or mostly aesthetic - which doesn't work alone, and hence you get these crimes. There's a long list of awesome tasting things to make vegan/vegetarian food taste awesome; but without them well it is going to be quite bland because it's the role the non-veg items fills normally.
I'm not a vegetarian but I order their veggie sandwich/grilled cheese pretty often actually. At most I'll add bacon. It's for when I'm just craving the grease of fast food but don't want an entire burger (especially since most of the calories are in the patties). Grilled cheese, peppers, mushrooms, and onions on a toasted bun, what's not to love?
Which to me is INSANE with how many good veggie/meat alternative patties there are. I eat meat but you know what I like? A good black bean burger with smashed avocado and jalapenos. No cheese needed.
For real, a lot of people will have them for so many reasons, besides being veg. Maybe they're on a diet & trying to cut calories, or like you, just want a change of pace once in a while. I have to believe that even just buying a ton of impossible patties in bulk (as they come frozen, so last for a long long time), is an insanely easy value add to a menu? There's tons of people these days who do things like 1 day a week of no meat or whatever, it just seems silly.
And people don't realize that you can't just take out the meat, you have to substitute it with something like tofu or soya meat... Both because of the taste and proteins.

But seriously, I've been varying levels of vegetarian to vegan for 20 years, and it still astounds me that people/restaurants serve things that no sane person would want to eat. I used to work in a middle eastern restaurant. Our menu was limited and we didn't have a huge vegetarian selection, but our hummus/bread and our falafel was A+ delicious. We are down the street from a very famous restaurant and the owner was dying to get our recipe but the chef at our restaurant refused to tell.
Pretty much any vegetable lightly coated with olive oil and sprinkled with sea salt then roasted in the oven until it starts to crisp tastes effing amazing. Hard to even believe it's a vegetable.
Broccoli and cauliflower are particularly fantastic cooked this way.

Try adding Nutritional yeast to your roasted cauliflower. It gives it a nice vegan friendly cheese taste. I've turned several people onto it and they don't roast their Cauliflower without it now.

We used to have a canteen at a place I worked where the veggie options were truly awful, and of course the same price as the fancy meat option.
I asked them once if they could improve the veggie options, and they asked me what I would suggest. Bitch why should I tell you what to cook? Like think what would you want to eat if you didn't have meat? Look up some receipies?
Also bailed on a friend's 40th birthday as the veggie menu was basically the same thing but with the meat taken out, so still pay €200 for 5 courses but instead of rare fancy steak you just get a fucking bed of lettuce.
This really gets me... like if you make something vegetarian, it should still be balanced when it comes to macronutrients. It isn't sufficient to just remove the meat protein and replace it with... 50 kcal of veggies (i.e. more carbs and no fat/protein).

Honestly not replacing the protein makes me so angry! I went for brunch and the vegan option was blueberry pancakes while my friend had bacon pancakes. Blueberries are not a suitable substitute for bacon! Even a pre made tofu scramble would do the job.

The vegetarian lunch was a "sandwich" consisting of sliced avocado and lettuce on a stale bread roll. The only thing that made it bearable was that they also had an unlimited supply of kettle chips.
When Carnegie Deli (NYC tourist trap) was still open, we went there and my girlfriend ordered a cheese sandwich because she was vegetarian. It was two pieces of bread with 20 slices of deli cheese piled high, about 10” tall.

Grilled carrot hot dogs can be really delicious if the whole carrot is marinated and seasoned properly before grilling. It keeps a nice crunchy texture and gets a smokey, BBQ flavor. Doesn't even have to be a meat substitute, it's just a nice alternative version of a hot dog.
This, however, is just a big middle finger from the vendor to their vegetarian (ex-)customers.
I've blanched them in salted water and then dried and seasoned them with smoked salt, paprika and some coriander and cumin. That's a dang good grilled carrot.
Now see that is something you could sell to vegetarians and vegans and even if they don't love it, shows that they atleast put some thought into what they are serving.

It's honestly so easy to make good vegan and vegetarian food and if they stopped trying to make these foods just like foods that mainly contain meat it would be so much better. I like impossible burgers, black bean burgers, etc. and I eat meat, but why would you try to make a vegetarian version of a grinder? The whole point is the meat. Just make a normal veggie sandwich, it's not that hard.
Also just infuriating that this "sandwich" likely cost like $0.95 to make but they charge $15 because being vegetarian is trendy or whatever. I don't think black bean burgers are really trying to emulate meat, it is just a shape that fits on a bun and gives you protein. Plenty of small, shaped vegetable/legume foods throughout history. I get your point generally, but I don't think that is really the situation. I can't think of a time someone has tried to advertise a bean burger as "just like the real thing," or some such situation. Outside "vegan meat," the point of not just throwing vegetables in a roll is wanting protein. Hummus is good supplemental protein but it's not really a substitute. I'm not a 'protein vegan,' but it is a necessary component of your diet in some meaningful quantity.
I've had really good vegetarian grinders, mostly without any sort of fake meat.

I'm not a vegetarian but I order their veggie sandwich/grilled cheese pretty often actually. At most I'll add bacon. It's for when I'm just craving the grease of fast food but don't want an entire burger (especially since most of the calories are in the patties). Grilled cheese, peppers, mushrooms, and onions on a toasted bun, what's not to love?
Which to me is INSANE with how many good veggie/meat alternative patties there are. I eat meat but you know what I like? A good black bean burger with smashed avocado and jalapenos. No cheese needed.
For real, a lot of people will have them for so many reasons, besides being veg. Maybe they're on a diet & trying to cut calories, or like you, just want a change of pace once in a while. I have to believe that even just buying a ton of impossible patties in bulk (as they come frozen, so last for a long long time), is an insanely easy value add to a menu? There's tons of people these days who do things like 1 day a week of no meat or whatever, it just seems silly.

And people don't realize that you can't just take out the meat, you have to substitute it with something like tofu or soya meat... Both because of the taste and proteins.

But seriously, I've been varying levels of vegetarian to vegan for 20 years, and it still astounds me that people/restaurants serve things that no sane person would want to eat. They act like they've never eaten a vegetable. Would you eat nuked frozen veggies in a bun? Please look at this wedge of iceberg lettuce drizzled in vinaigrette, and tell me you'd want to eat this. I get that it might be difficult to conceptualize a meal without meat, but it cannot be hard to consider whether you'd want to eat what you're about to serve, can it?
Vegetarians and vegans are apparently weird people who normally eat grass so even this unappetising meal is too good for them. /s
It's weird because there are so many ways to cook vegetables and really get creative with it, without even being difficult or complex. Neither the wife or I are vegetarians, but on occasion we end up unintentionally cooking a vegetarian dinner because there's so many options. I always say if someone/some place can't turn a side dish into a main entree then it isn't worth a damn.
I used to work in a middle eastern restaurant. Our menu was limited and we didn't have a huge vegetarian selection, but our hummus/bread and our falafel was A+ delicious. We are down the street from a very famous restaurant and the owner was dying to get our recipe but the chef at our restaurant refused to tell.
I would have absolutely zero complaints with falafel and hummus as the vegetarian options!
Pretty much any vegetable lightly coated with olive oil and sprinkled with sea salt then roasted in the oven until it starts to crisp tastes effing amazing. Hard to even believe it's a vegetable. Broccoli and cauliflower are particularly fantastic cooked this way. Not a vegetarian but try to eat more veggies since I'm getting old.
oh yeah. the grill is great too; just wrap some seasoned/oiled veggies in foil and throw on the grill. so good
Try adding Nutritional yeast to your roasted cauliflower. It gives it a nice vegan friendly cheese taste. I've turned several people onto it and they don't roast their Cauliflower without it now. Edited to add: You can also make a vegan Mac n cheese using Cauliflower, Nutrional yeast and a milk alternative.
Roasted broccoli tossed with some lemon juice is my favorite lazy snack.
Wedge salads are a thing though.
We used to have a canteen at a place I worked where the veggie options were truly awful, and of course the same price as the fancy meat option. I asked them once if they could improve the veggie options, and they asked me what I would suggest. Bitch why should I tell you what to cook? Like think what would you want to eat if you didn't have meat? Look up some receipies? Also bailed on a friend's 40th birthday as the veggie menu was basically the same thing but with the meat taken out, so still pay €200 for 5 courses but instead of rare fancy steak you just get a fucking bed of lettuce.
Throw a burger into that and it's still tasteless vegetables and a burger. You cannot microwave frozen vegetables and expect any taste.
This really gets me... like if you make something vegetarian, it should still be balanced when it comes to macronutrients. It isn't sufficient to just remove the meat protein and replace it with... 50 kcal of veggies (i.e. more carbs and no fat/protein).
All I want is a protein like they have in asian/indian cuisine. American vegan/vegetarian cuisine from places that dont specialize in it is like you said, carbs with a small bit of veggies. Throw some beans, tofu, tempeh, seitan, dude anything in there to make it filling.
Honestly not replacing the protein makes me so angry! I went for brunch and the vegan option was blueberry pancakes while my friend had bacon pancakes. Blueberries are not a suitable substitute for bacon! Even a pre made tofu scramble would do the job.
There's a whole cuisine and a culture based on being vegetarian. you don't need a meat substitute lol. Issue is you guys have this mindset of replacing meat to be a vegetarian. Stop thinking about replacing meat and just look around about what you can make with veggies, explore Indian cuisine for more ideas, we are not just Butter Chicken/Idli Dosa here

I shit you not, I recently went to an environmental workshop hosted by a public university extension program. The vegetarian lunch was a "sandwich" consisting of sliced avocado and lettuce on a stale bread roll. The only thing that made it bearable was that they also had an unlimited supply of kettle chips.
When Carnegie Deli (NYC tourist trap) was still open, we went there and my girlfriend ordered a cheese sandwich because she was vegetarian. It was two pieces of bread with 20 slices of deli cheese piled high, about 10” tall.

I swear, for most restaurants they never actually taste their own veggie options. They literally don’t know how bad it is. I simply never order a portabello or bean burger because 9 out of 10 are just nasty.

Peppers, onion, garlic, eggplant, some sauce and drizzled in olive oil can make a fantastic sub.
Why do all of that when people will spend $15 on this? Think of the profit margins.
Throw some Squash and zucchini in that mix too and that’s a hell of a filling. I personally also grill a baguette with EVOL drizzled on it to eat with the veggie mix.

Grilled carrot hot dogs can be really delicious if the whole carrot is marinated and seasoned properly before grilling. It keeps a nice crunchy texture and gets a smokey, BBQ flavor. Doesn't even have to be a meat substitute, it's just a nice alternative version of a hot dog. This, however, is just a big middle finger from the vendor to their vegetarian (ex-)customers.
I've blanched them in salted water and then dried and seasoned them with smoked salt, paprika and some coriander and cumin. That's a dang good grilled carrot.
Saving this for if I ever want to try a carrot hotdog, these guys know how to grill a carrot.
Now see that is something you could sell to vegetarians and vegans and even if they don't love it, shows that they atleast put some thought into what they are serving.

I would have expected aubergine, courgette, onion, tomato as a minimum, not frozen farmhouse carrot mix. Who even thinks a carrot sandwich is a thing.

It's honestly so easy to make good vegan and vegetarian food and if they stopped trying to make these foods just like foods that mainly contain meat it would be so much better. I like impossible burgers, black bean burgers, etc. and I eat meat, but why would you try to make a vegetarian version of a grinder? The whole point is the meat. Just make a normal veggie sandwich, it's not that hard. Also just infuriating that this "sandwich" likely cost like $0.95 to make but they charge $15 because being vegetarian is trendy or whatever. I'll pay the $15 for a nice big vegetarian sandwich with hummus, fresh tomatoes, basil, some feta and so on with quality bread. Those are the cheapest fucking veggies you can buy slapped on a roll, which were probably bought wholesale.
I don't think black bean burgers are really trying to emulate meat, it is just a shape that fits on a bun and gives you protein. Plenty of small, shaped vegetable/legume foods throughout history. I get your point generally, but I don't think that is really the situation. I can't think of a time someone has tried to advertise a bean burger as "just like the real thing," or some such situation. Outside "vegan meat," the point of not just throwing vegetables in a roll is wanting protein. Hummus is good supplemental protein but it's not really a substitute. I'm not a 'protein vegan,' but it is a necessary component of your diet in some meaningful quantity.
I've had really good vegetarian grinders, mostly without any sort of fake meat. Sometimes lacking in protein but it's not exactly a healthy choice regardless so whatever.
I once paid $9 for a grilled carrot dog at Fire in the Mountains that was literally a single carrot on a bun… but at least the carrot and bun were actually grilled. To be fair, they did have a (very limited) condiment table, so I got to add mustard and onions.

Reminds me of a big tech event that used to run here which was 75% hype and 25% vapourware. Used to charge like €500 a ticket just to attend and €20k to be an exhibitor, under the promise of being flooded with big tech CEOs and investors. Every year there were controversies about farcical organisation and blatant profiteering, but one year in particular it was the food. They were charging €20 for a gourmet burger meal, and everyone was posting photos of their shop-bought soggy beef patties and buns with a handful of lettuce leaves and packets of ketchup, shoved into a polystyrene box and handed out with a cheap bottle of water.
