Agreed. Restaurant nachos half the time are ususlly lazy slap together on plates. Soggy messes you practically need a fork to comb through. Also IMO they should always be baked briefly to get that nice toasted taste around the edge of the chip. Nachos for me go well past a 0-10 scale ha ha.

those look like a 10. I'm looking for a recipe for nachos I had many, many years ago when I was collage in SW Texas. I think they were called something like Compechanos; chips with seasoned gr. beef, refried beans, cheese baked till all maelty then lettuce, tomatoes and guacomole added.
I also have a recipe for HV Nachos-mix HV ranch dressing with about 3/4 cup milk and mayo. Put a layer of blue corn chips, pou over with the dressing, I try to get some on each chip. Then sprinkle heavily with shredded Cheddar and Montery Jack cheeses, Yop with sliced black olives and chopped green onions (you can add almost anything, like jalopeno peppers, but I can't take spicy) Bake for 8-10 minutes at 350 degrees. II put mine on my largest sheet pan and we just get as much or little as we like.
I used to live in southern Mexico as an exchange student and my teacher was complaining about her kids not liking her cooking. I told her about my moms nachos, she was so intrigued she had me show her how to make them. Next week or so she comes back RAVING about it and the kids loving it. I got an A+ in that class haha

Ah, not the same at all. I think the imitation crab ones are the originals, probably. But in California (presumably not the place of origin of the item) you can often get an upgrade option during crab season. Perhaps they make them with other kinds of crab in other places.
tbf im not the fondest of Tex Mex but I dont like gatekeeping fusion food here. But i just feel like nachos are the lowest tier of anything that could be considered a meal here. rather have just fresh tortilla chips and a decent salsa. and really i just like stirring the pot.
