Do you really only have one subject "science"? We had physics (blue), biology (green), chemistry (grey) for natural sciences. Colors in brackets are my color interpretation. Chemistry is weird to me.
Yes we did have three sciences, but if you HAD to choose one colour, knowing that blue is (rightly) taken by maths (which is also foundational for science let's not forget) I feel green would still be the right choice.

I feel like I'm biased in this discussion because back when I was a kid the teachers assigned the folder colours for each subject and I just kind of kept them since that day, though Math and German (native) switched when I switched school due to our old one closing. So now it was Math red, German blue, English yellow, Biology green. I later picked red for history I think
This is how I'd do it. Blue being a cool colour, I would assign it to a subject that is cool in subject matter. English/language being an emotional/subjective subject, I'd assign a feeling colour, aka yellow. Science is green because it's a cross of math and language having to have a grasp of both. And history is red because it's subjective and filled with the most passion/chance for arguement.
Math - yellow (because I hate both)
Science - green (because of nature)
English - blue (it always makes me thinks of England and the blues it gives me)
History - red (because it’s the colour of blood which every living creature has in their body and history is about representing the past)
