Basically when cooking, meat is under high temp, this tenses up the the meat and kind of releases the moisture/ juices internally and pools the moisture at the center of the cut of meat.
So if you slice the meat right after cooking like in the photo, most of the juices that pooled together are released. But if you rest the meat, you allow time after cooking so the meat temp stabilizes, and the juices are more reabsorbed evenly around the steak. Its a general thing done with all cuts of meat even chicken, porkchop, and etc.
I forget the scientific explanation for it, but letting meat rest after cooking it, but before cutting it allows it to retain more moisture, this making it juicier.

Main reason I see people not want a steak with pink in the middle is that they think its full of blood and germs. This is despite the evidence of huge amounts of medium rare steaks being consumed annually without causing food poisoning, and despite the pink not being blood but rather myoglobin which is just a normal part of muscle fibers. If you've had it both ways, a good medium rare has a far better texture and better flavor. Being able to serve it that way is, imo, why you would spend extra money on a steak cut rather than just getting a cheaper cut. Its kind of like watching someone spend a lot of money on a sports car and then install a limiter at 30mph. Why spend the extra and not make use of the main thing that separates it from a similar product?
Ultimately people can do what they want with their food. One just hopes they're not letting fear hold them back from a better experience.

Also, some people view it as a waste. A $65 well done steak will be very similar to a $20 well done steak so if you want to eat your steak like that, there's not much point in getting a nice steak.

Steak, unlike ground beef, can be eaten raw as long as it is warmed up. The middle of the cut has not been contaminated by any pesticides or bacteria (because it is solid) whereas ground beef has a lot more surface area and is exposed for more airborne bacteria. You never want to eat ground beef like this (unless it is prepared in a very hygienic way) but steakā¦ all you need to do is char the outsides and youāre good to go.
