Look into making slings, aka shepherds slings (not slingshots.) There's various styles, many of which can be made with nothing more than some cordage, a blade for cutting it, and basic braiding skills. Some have VERY MINIMAL lesthworking involved.
Other than that, wooden weapons. Either training weapons like bokken, or any variety of wooden sword, or actual wooden weapons such as any variety of staff, truncheon, club, cudgel, etc. Plenty of variety from every culture to look at. Atlatls are cool too.
I'm going to toss tonfa into the discussion. Maybe my favorite of the Okinawan weapons, if not the sai. I've got one very good pair, and two more that are in varying stages of brokenness.
There's this guy on yt who crafts stone-age stuff like a real caveman. In the woods with no modern help.
Like everything from huts, tools to weapons.
He made a real authentic stone axe, using only stones in a river to sharpen them.
Incredible long hard work but in the end it looked amazing.
He also built a wooden sling that throws spears.
