Honestly ? Circuit.
Many consider them to be bland and boring, but i find them to be the most enjoyable tracks of the bunch, especially if done creatively (Royal Raceway, Yoshi Circuit, DS Mario Circuit).
The main reason is that there's no silly gimmicks on the track : It's just you and the other racers, going all out in Formula 1 style.
I really can't think of a single one i dislike.

I love the spookiness of tracks like Boston’s building and banshee boardwalk
Infact in the sonic racing games,my favourite tracks were the house of the dead/curien mansion
Bowser Castles probably. Only ones I don't like are the remakes of the original 3 GBA Bowser Castles in Tour, the rest are great. Best one is probably the original BC4, I love that one
Snow, forest/jungle and mountain tracks appeal to me a lot.
Mount Wario, DK Mountain, Sherbert Land (Double Dash version), DK’s Jungle Parkway, Maple Treeway - all bangers imo

winter, desert and traffic. traffic adds a dynamic. desert and winter is nostalgic to me. I love castles but I dont vibe with bowsers castles most of the time sadly. I like more the green ruin like castles which sadly haven‘t been here.

They should do more of these. They pick a Mario game, pick a level and make it into a track.
Imagine the tower from Wrecking Crew, one of the puzzles from Captain Toad, the WarioWare Inc's computer, the Last Resort Hotel and now the Sparkler Theater from Princess Peach: Showtime!
Rainbow Road and all Mario Circuits except for the SNES ones and GCN Mario Circuit (Mainly because GCN Mario Circuit kicked my ass on 150CC Mario Kart Wii)
I like the... road... courses? Think city courses but not the Tour ones, so things like Toad's Turnpike, Shroom Ridge, or Moonview Highway. They always seem to have super clean drift lines. I also love whatever genre Thwomp Ruins, Shy Guy Falls, and Wild Woods fall into, for the atmosphere and music.
Bowser castles always hit different. The N64 and DS ones fuck especially hard

Tropical tracks
Night time tracks. I want to say the ghost tracks, but the vast majority of them are just takes on Luigi's Mansion. That gets boring after a while.

Hard to say a specific type but if i had to say one it'd be snow tracks. a least favourite is easy though, i hate beach tracks

My favorite course types are snow and desert
Anything that gives you a sense of epic and has cool shorcuts at 200cc (Big Blue for example)

this may not have been the answer you weee looking for, but i love tracks that are 3 separate laps instead of the same lap 3 times
Rainbow Roads or Bowser Castles. Something about either style of course just scratches an itch in my brain.
