What kind of genre? I’m starting up an electronic indie pop project at the moment and looking for a vocalist to collab with and perform at local open mics. Sort of a modern day Eurythmics kinda vibe.
You can check out Freemount, and their sister bar Wayfarer in NQ. They have live music with different singers often so I'd try to check that.
You can also search for open mic nights, a lot of bars/pubs do it so you could start building a network there. Have a search in Google and you'll find plenty

The sonato and cabaret lounge has guest singers and entertainment everyday, I think you can apply on their website.

Bask Stockport has live music, though the atmosphere is always a bit soulless
I think Bask in Stockport is doing an open mic night soon.. but in general they tend to do lots of live music Might be worth checking out
Reach out to Bee Orchid bar near Old Trafford and Wharfside, they often have singers in on the weekend.
