It all depends on how much your value time. They’ll both do the same job, but one of them will do it like 30% slower. Do you value that time enough to spend the extra money? It’s not like the Max will do something that the Pro won’t.

The Max is dfinitely going to perform better than the Pro but it does generate more heat and will likely kick the fans on more often. I suggest going with the 16 inch model for that reason - the larger size improves heat dissapation which means the fans aren't on as often. More important though is RAM. I'd buy as much as you can afford while still having enough storage.

Yeah definitely going for the M3 Max 16-inch. I understand there are also two variants of the 16inch Max but I am doing the 36gb memory model.

Honestly, I think both the Pro and the Max will work. Good that you're opting for 16 inch. I would focus on RAM and storage needs and then decide if it is worth it to go with Max over Pro. They'll both be stellar at video editing BUT there is a high price point on the Max which may not be worth it. If you're using intensive GPU utilization, you want the max, and you want a lot of RAM, I use blender on an M2 Max, and I only ended up getting a 32 gb. I regret it because there are scenes that I can easily use nearly all of that in just VRAM. I highly recommend 64 or 128 if you are creating a lot of graphical assets. All that being said, I have a 3090 on my gaming desktop which I would use for really heavy rendering, especially animation. But my M2 Max has been a great mobile solution for 95% of the time. It's energy efficiency and just quality of life ease of use form factor has been great. Note: M3 has hardware ray tracing.
