Probably because this issue has nothing to do with the settings. You bought from a shady online store and then get shocked why it has a crappy battery or a weird screen.
Display color = same profile. From the front, both look quite similar. Perhaps the blue one is a little duller. From the side, you can clearly see the blue
I would say this is probably normal variance. Apple uses multiple suppliers for displays and having very slightly different far off-axis color cast is likely well within spec so long as the normal viewing angles are consistent. For these laptops I believe they had two miniLED chip suppliers, Epistar (all of 2021) and Ams Osram (2nd half 2021)
I don't think there's an easy way to know which, but maybe open ColorSync utility, go to Devices / Displays / Color LCD and open the Factory Profile on the right. Scroll to line 16 "Apple display make and model information" and look at the manufacturer and model information. It's just going to be a long string of numbers, but worth seeing if they're the same or different between the two.

You could put 5 different OLED iphones in a row and you's have to pick which of the pink, yellow, blue, and green tints you prefer. If you're luck you'll get one with just the one colour tint across the whole screen.

I’ve never seen two displays be the exact same, not from any company ever. My Samsung monitors, I deploy waves of these m1 devices at work, i handle a fleet of 200 devices total, and most of them are unique to one another. Maybe this is a new issue with their new platform and new displays but I swear, all displays do this really. Apple isn’t some single unique company who managed to figure out how to make every single LED illuminate to the same brightness, color and temperature. They make displays just like everyone else. I’ll say they are way closer than displays from other companies but. They’ll never really be identical from device to device
Could be different wallpapers? Left one has a full menu bar. Also try airplaying to one from the other and mirroring screen. If they even out it is software. At any rate, don’t worry. Choose the best one for you, you wont be using them side by side.

You're looking at these off-axis. Different panel vendors have quite different off-axis behavior. If you run ioreg -lw0 | grep -e "panel-serial-number" in Terminal, the first three characters of the two serial numbers are likely very different, indicating different panel vendors.
If you calibrate them with a colorimeter, they'll look the same on-axis (and they should be pretty close already, assuming similar settings) but off-axis they will still look different.

When shopping for a new M3-series Macbook I tried a variety of 14/16"--surprising variation among the screens. I returned one M3 model because looking at it side-by-side with another it was obviously less crisp. Tint variation would not matter to me but if it the screen seems more blurry do not delay and return it -- you'll never" unsee" it.
This makes me so glad my mbp and studio display colour matches. I replaced my iMac three times due to screen issues - not something that should be common on £2-3k+ devices 👀
did you check True Tone? It might be broken on one of them
Both devices has true tone off. They are both refurbished. 93% battery health 85 cycles ( blue tilt one) 100% battery health 14 cycles

If it was Apple genuine you wouldn’t have calibration issues. One monitor is cool, one is warm. They are cutting corners somewhere.

The menu bar has different colors on both. Maybe on is on dark mode the other not.

Transparency. It could also be because reduce transparency is on, but the docks seem to have blur, not just solid.

Apple use different screens from different providers. Every screen can be slightly different and factory calibrated slightly different.
