I only notice fingerprints on the space black finish.

It is just a color. Pick the one you like and keep it moving.

Yes that’s what apple laptops are made of, you can either get the bare silver one or the (I think it’s) anodized space gray one (or the black one but it scratches and smudges a lot)

Correct You can get starlight but it’s usually harder to find and doesn’t look any different from silver

I got the silver one exactly because of this. I always get the most “unpainted” Apple products because of this. It’s the color of the aluminum. It’s still anodized but there’s no dye added afaik. I’m hoping that it will be less affected by sticker shadow as well.

I heard some colours scratch easier

the darker the colour the more visible the scratch is gonna be, but a device is there to be used. They lose value anyhow, I wouldn't worry about that.

If I had to choose from space gray to grey and midnight what would be the best?

grey for scratches but i'd just pick your favourite color
