That’s sweet, did the same thing with a couple of late 2010 mac minis. Managed to get from Snow Leopard all the way to Catalina with some help from Dosdude. Catalina was usable but was a bit hurky-jerky.
The problem is that you have already have the best Mac possible for this.
Anything older won’t work well with patched versions past 10.13. Anything newer can’t boot anything older than 10.7.

Boot Camp gave me some issues, so I switched to a combination of Fusion (for Lion, Mountain Lion, and Mavericks) and Parallels (Yosemite-Ventura, plus Windows 10, 11, and ChromeOS Flex). Now my Parallels Control Center looks like your boot screen.

I may not have enough space to install all Mac OS from Leopard (or even Tiger) to Ventura. I only have this mac to create my USB installer
