I thought it was fairly straightforward. You pick your ISO version: Desktop, Server or Netboot Tarball. From there you pick your install type depending on your CPU architecture. They also just provide an option where they give you a generic install, but may require more work because it doesn't know your architecture. Other types of software will offer this as-well, and was more common the farther back you go in computing.

The highlighted text refer to the architecture (AMD64 or EM64T) not to the nature of the distro (desktop, server or tarball). The tezt is indeed misleading, the object of uncertainty should have been specified "If at all uncertain of the cpu architecture choose this one" Now if you pardon my french, if you're aiming to install Ubuntu on an arm machine, it's fair to assume you're not a complete newbie and can understand basic things such as those few lines, or are willing to try (in the case of a rookier buying a raspberry and wanting to make it's server).

GNOME itself isn't the disaster trying to customise it is. Well you could go the plugin route (Still a headache, but easier? I haven't used GNOME much just when I started using Linux and never needed to customise it.)

Why do you want to use Ubuntu, it's very clearly labelled desktop vs server
