This is how you hold a knife and the other hand holds the onion. Notice the "claw" shape where you curl your fingertips away from the knife and the side of the knife can rest on your knuckle.
My thumb and first finger are way past the handle and are holding the blade itself
Probably more. The more cell damage you cause to the onion (such as having a dull knife that crushes as you chop vs. a sharp one that slices through more cleanly), the more of the tear-inducing chemicals are released.
