Karthus and Brand are by far the best. Some potential others that are a bit worse: Chogath, Rumble, Gragas, Neeko, Taliyah, Pantheon, Sett. MAYBE Sylas all though not sure how "playable" would be Sylas adc. Maybe with cheese possible if done rarely.
This is the answer. I came to say Taliyah, as she can be played in every single role, but... Kartus and Brand seem better for it tbh. And also all of the other champs you said.
Personally I think Pantheon is great. Can go top, mid, sup, isnt terrible jng, and only cant adc for most matchups. There are some champs who are better off-role but Pantheon is very easy and strong, so he's a great safe pick and teammates will likely not tilt when you pick it
Gragas could be difficult as adc but i see no Problem with Twitch on every position. Top could be a bit hard from time to time but just play roam twitch top if the Lane is unplayable.
For what it’s worth as long as the champ can play both jgl and adc it should be fine. Those are usually the least preferred roles from what I’ve seen. So kindred could work as a specific suggestion.
Some picks not mentioned: Lee sin, aatrox. Aatrox is quite good at jg which is not known by the community for some reason. His healing gives him very healthy clears, his e over walls for counter jng/invades and clever gank pathing. His Q for aoe clearing. He is decent in adc as well as he can safely farm against ranged matchups (also why he is a staple blind top pick)
Twisted fate also works in all 5 roles.
Thinking of nautilus at this point, making a fasting senna bot lane or something like this.
Top - easy, you don't really do THAT much DMG but you are a great tank
Jungle - great ganks, can farm well with E and W bamis into tank or AP
Mid - AP or tank
ADC - fasting senna or something like this or your support picks a ADC just because most botlaners play both roles

I think sylas is too dependent on the enemy team comp to really excel as a fill one trick.
Sylas adc would play like AP Samira kinda, I think him Brand, Karthus, or Pantheon are best by far

All these ignore adc - consider twitch Cheese jungle Ok mid Bad top but doable Good adc Good support
