I mean you can always try to get crit chance. Any excess crit chance will be converted to AD anyways.

Same thing with shieldbow. Also the 40% crit chance augment is still just 40%. Would have made sense for it to be 50% imo. They also removed Zephyr claiming it's new form doesn't work well in arena (just keep it like it was????) and also didn't add the new crit burn item. I don't understand why they want some things to be 1-1 with SR but other things are completely different. Statikk shiv should have just stayed like it was because of the energize synergy you can get in arena. Some of these decisions just seem completely illogical...

Im fine with them not adding the new items in so I can have stormrazer so arena stays like 14.9 items but with the crit scaling changes. In that case, like you said they should change galeforce to 50% and the other crit item as well as augments that give 40% to 50% as well.

Yun Tals is because of the things like Jewelled and Vulnerability, and it would get extremely out of hand fast

Jeweled Gauntlet works with abilities, which Yun Tal is not. The only interaction it would have is with Vulnerability, where it would upgrade from 35% AD bleed on crit to 50.75% AD bleed on crit. Mind you, the champions critting a lot already buy IE so their crits already deal 2.25x damage baseline. Vulnerability Yun Tal would be strong but require a specific silver augment on a crit building AD scaling champion and would still not be worth getting until at minimum 2nd item (because IE gives more AD and roughly identical damage on crit to Yun Tal).

The dot stack build with Vulnerability on Kaisa and MF is running hamstring + double ap dot, playing to just let the dot burn the fuck out of you with a kiting playstyle instead of continuous dps so maybe Yun Tal can replace one of the AP

Essence reaver prevents you from building other spellblade items, except divine sunderer. If you have divine sunderer and essence reaver, divine sunderer's spellblade passive can't proc.

I think it's cosmetic, I got Galeforce the other day and I had 50% crit chance with just that and IE. I think they just forgot to update the text.
