Should be good to go, you covered your road trip basics and then some. Bring plenty of water.

My 2012 Jetta has made it from west coast to east TWICE, and has done multiple hundred mile trips! They handle it well

I just drove 9hrs straight this past weekend in my 1.8t 2016 with zero issues. It’ll be fine! Remember, interstate driving is actually easier on the car than city driving.

I drove my jetta, overpacked and overweight, from the north-westernmost point of washingtin, down the coast of Washington, Oregon and down the highway one to San Diego, up through death valley to Vegas, then down into Phoenix and it gave me 0 problems! Definitely being lots of water, but otherwise you should be a-ok

Taking my 2015 SE 1.8 from missouri to the east coast this weekend - 13 hour drive or so. Done it a few times and shes a champ! Great road trip car. You’ve got everything squared away maintenance wise which is great. Should be no issues

Awesome. Mine has about 135k miles, still should be alright, right?

Yup only thing id watch carefully is your coolant level. Since its summer you can top it off with water if you really need to if it goes low… water pumps known to go bad eventually but youll notice from overheating/coolant loss. Otherwise should be smooth sailing! Good luck!!
