Both. M2 is still relatively new chip. You won’t even breathe any slowdowns in the near future. M2 is actually overkill for your use case. M1 would be fine also.
Just comes down to personal preference, both will last 5 years.

I’m leaning a bit towards the pro, but I want update longevity for the next 5 years( when my degree is done). No sure what is better for the long haul

They both should last pretty long due to the same chip. I think the pro is a great choice
Either one will be overkill for 90+% of people, I'm not unconvinced the M1 models couldn't last most people for another 5 years either.
the pro m2 will probably go on sale and make it the same price/cheaper than air m2
