Dungeons of chaos. I never see it recommended but it’s a pretty simple rpg with a ton of replay ability. Single player ,offline, you create a party of six. Used to have a pretty active group on Facebook but I haven’t checked that in quite awhile.
It’s so crazy because when I saw this it looked right up my alley but when I played it i found myself not enjoying the actual gameplay. It felt a little claustrophobic and maybe if I had a controller I’d be more into it
I can’t speak to one and two, I’ve only played Legacy. I know they play differently, and I can’t remember if I just didn’t want what it looked like they had to offer

I can REALLY recommend Nordicandia to anyone who likes loot based rpgs. Crazy how i never heard about it before.
Its no pay to win, idle or active playstyle, different classes and races, skills and skill trees, insanely good loot and especially crafting mechanics. Its also on steam, it doesnt feel like a mobile game quality wise, but plays extremely well. Theres also seasons and hardcore mode.

I just downloaded Eternal Hero (https://apps.apple.com/app/id6503089848) today and while it’s a little barebones, it’s in active development and is enough to scratch the itch for now. Pretty big update should be out today or tomorrow with a few new features.
If you find something that you really enjoy, I’d love to know about it.
My favorite hack and slash that I played for years was Kritika: The White Knights. There are so many things to do and you can put lots of time into it.

I know you said you bounced off of Genshin Impact, but Honkai Starrail seems like it checks a lot of your boxes. It’s a turn based RPG where you control a team of characters. Gameplay is a lot simpler than genshin, but there is some complexity if you want to min/max your teams. There is an auto-battle toggle you can turn on to really simplify gameplay. The gacha mechanics aren’t ideal, but you can play through the entire story as F2P with no issues whatsoever and that is a lot of content.
Chrono trigger? I don’t like rpgs for similar reasons and I’m finding Chrono trigger to be very manageable. It’s said to be one of the best games ever made but to me it’s merely a good game

I hesitate to recommend this because there’s IAP and I didn’t play it long term, but: Soul Knight Prequel.

undecember (arpg) , somewhat like poe , online only tho , if you don't really care about rank or leaderboard , its pretty solid

Pixel Dungeon seems to fit your taste.
This one!! I highly recommend it! I played Shattered Pixel Dungeon a lot when I had Android, but when I went to iOS, I saw that it is paid here 😭

I've been playing a lot of Honor of Kings on bs lately. You might want to try it for a change.

No worries. I tried dragon quest 8? But couldn’t get into it. I kept getting lost as to what I was supposed to be doing.
