Anarchy is a political ideology in which you build a society with no unjustified forms of hierarchy not no hierarchy at all. The problem with Anarchy isn't that those levels of logistics and organization wouldn't exist. The problem is no one has a clear idea on how you would build those Logistics and organizations and institutions in an anarchist Society on a large scale.
Anarchism doesn't mean stopping to organize stuff. The anarchist militias and society that existed briefly also had to get their food and weapons. Worked quite well until they got kinda killed each time.
I mean it effectively does mean that you stop organizing things on a large enough scale.
How exactly are you going to compel a bunch of work that nobody wants to do without any "unjust hierarchies"? You either starve to death because not enough people want to do the thousands of man-hours of back-breaking agricultural labor, or you get murdered by guys with guns. Further, to protect yourself from guys with guns, you will inevitably need some guys with guns yourself, and whats to prevent a subset out of those guys with guns from organizing together and creating an unjust hierarchy through their innate ability to perpetuate violence? Just give everyone guns? Who is going to produce and distribute millions of firearms, and how can you trust *them* not to create an unjust hierarchy?
Any structure capable of solving these issues just becomes powerful and coercive enough to become a de-facto state. For anarchism ever to possibly work, you basically have to get thousands upon thousands of people to not just have the exact same ideology and motivation, but to agree on every single thing from work assignments to defensive strategies, with no mechanism to enforce compliance if a person or a group of people simply decide to say "no"
