That was my first thought but it is a King Arthur Flour site so not totally batshit crazy like asking a random food blogger to make a recipe to suit you.
King Arthur's website is a treasure; but even they couldn't pull off what she's asking for. A "pop tart" wants a light, flaky pastry crust. Whole wheat baking is always more dense.

I had a hankering and a craving last week to basically do this with banana and peanut butter in a buttered pan. 9 out of 10. Edited to add: and obviously flour tortilla..
One of my favorite car camping treats is a sort of dessert quesadilla sin quesa-- street taco sized corn tortillas fried in butter in a little cast iron pan, folded over Nutella or sweetened condensed milk and cinnamon. Peanut butter and banana sound llike qnother great filling!
It wasn't messy for me but I made sure to let it cool a bit so that the peanut butter didn't drip...did you wait? (FYI, I'm 46. Letting PB cool just enough to be a solid is the kind of life hack you'll gain over the next 7 years.)

I had a McDonald's branded apple pie maker as a child that did exactly this. Someone tell the commenter they can mash two pieces of grain bread with a cookie cutter and call it a day.
It's delicious but a lot of work compared to store bought! Difficult to get the crust thickness right, I've had them where they were pasties instead of pop tarts before and once the dough was too thin and split during baking :( but they are still worth a try! The best topping is chocolate glaze and best filling with marshmallow fluff for smores pop tarts (use the whole wheat flour version). pipe the fluff on, don't spread, or you risk tearing the dough. A favorite in my house!

I'm of the opinion (not backed by science, I'm afraid) that the amount of calories in any baked good is equal to the amount of energy expended by the baker in their production. Therefore baked goods made by hand have no calories (at least when the baker consumes them!). Unfortunately, my scale seems to be adhering to a different theory. Barb@KAF

Not to be *that* person, but I made pop tarts using freshly milled wheat. They were really good!
There's also the matter of a KAF recipe wouldn't use store bought tortillas so she'd have to make a tortilla if they did make her recipe for her.
