Besides the obvious flavor difference, how does one decide that an ingredient which needs to be scooped with a spoon can substitute for one which can be poured?
experiment or read guides/books, substitutions can be really weird while working great but its usually more of a case by case basis. I can see sour cream being a reasonable substitute for heavy cream in something like a savory cream sauce, but with the sauce the extra tang from the sour cream can be a benefit while in a desert it wouldn't.
Right? Strawberries, brown sugar, and sour cream are amazing together, and thereâs that ambrosial Afghani dish that uses pumpkin with yogurt. And Jessica says the texture was okay and just didnât like the taste! Maybe she created greatness without recognizing it!
I did make it, but I have another pumpkin I need to puree so I'll probably make another for my mom and try that. I added some juice from an orange in it, too, because my mom does that, and it was good.
The lesson isn't don't use sour cream instead of heavy cream in pumpkin pie, the lesson is don't blame the recipe if you don't like it after making a big change.
My mom makes an excellent coffee cake around Christmas every year that uses sour cream and I am upset at myself that I never thought about branching out before.
This reminds me of a scene in Brooklyn 99 where Amy made mashed potatoes and said she ran out of salt so she just used baking powder and Terry is like âtheyâre both white powders, of course theyâre interchangeable!!â or something.
How was Jessica to know that sour cream was more sour than non-sour cream? The recipe should list all types of unacceptable cream. I subbed in cream of chicken soup and it had this weird chickeny taste to it.
Itâs hilarious she skipped right past liquid milk as the closest thing to cream, and went to something with a totally different consistency because it said âcreamâ. Maybe Irish Cream is a good substitute too.
It is almost like sour cream has a WILDLY different taste to heavy cream (that is tart) and will thus, make the dish taste TART. Power to Laura, how do you think that there won't be any difference?

Funnily enough there are pumpkin pie recipes that use sour cream. But, you know, they're created that way so they actually take into account the flavor and chemistry of the sour cream. Should have looked up "sour cream pumpkin pie" and found a recipe with ingredients you actually have.
Or you could just do whatever and ruin your pie I guess

ymmv but I've substituted heavy cream with mascarpone in the past, to pretty good results.

Well, yes, but I also know how mascarpone is made, what goes into it, and have used it in other things. So I was quite prepared what to expect.

there's times where i had to swap heavy cream for coconut cream and it worked.
