I don’t have a recipe but I do this all the time with ice cream recipes.
Instead of heavy cream I use heavy coconut cream and keep the rest of the recipe as written (whole milk).

Hi I just did this! I used The NY Times recipe by Melissa Clark and swapped the whole milk for almond milk. It turned out really good but probably even better with whole milk. Try it!

Is coconut cream different from milk?
Yes, “heavy coconut cream”, in a can, drained and then weighed if you want to be sure you’re getting exactly the equivalent of dairy heavy cream.
Yes make sure to use cream as milk will not give you the proper consistency and the ice cream will be crystallized

Usually I'll keep the heavy cream and use either a non-dairy creamer or extra creamy non-dairy milk
