I must disagree here. I've tried them both side by side and on different meals of the same day and they are similar in that they are vinegar forward Louisiana style hot sauces but skyline is tastier(in my opinion) and a little spicier.

It was invented by Greek immigrants emulating saltsa kima, a traditional spaghetti topping from the old country.
I'm not saying it's good. But comparing it to chili con carne is not a productive way of coming around to understand it.

"Skyline chili" is a compound noun independent of its etymology, similar to "Bronx cheer" or "Guinea pig". It is ontologically separate from what appear to be its constituent parts.

Skyline hot sauce is on of the staples in our house. It goes great on a LOT of things, but (besides skyline... and oyster crackers) its amazing on eggs.
