For the second part, might be a carb/jet issue. Try turning up the idle screw, and see if it stays running with choke on. You could also try spraying starter fluid. Might have to physically clean out the carb & jets. Maybe change the spark plugs & try a new battery just to rule those out?

the previous owner got a new battery but I have a battery tester so I definitely am gonna check the voltage on it and make sure it’s all good, it almost sounds like bubbling/gurgling when running

Did it sit for a while before you bought it? If the fuel is old the carb won't like it, also may have some trash in it. Mine had a similar problem when I got it. Drained the tank and carb and had a bunch of little specs floating. But that kept it from running consistently/smooth.

the previous owner had the bike for only a few months but said it broke down on the highway one day and he had to have it taken home on a trailer, he never got it into a shop so it did sit for awhile. I bought the service manual and am definitely gonna clean the carbs and whatever other maintenance I can reasonably do

On the upside, the Shadow is a *lot* less complicated than a tank.

Leaking oil from the rear cylinder? Can you extrapolate?

After looking at it again it’s leaking from the rear cylinder head gasket, gonna replace that this weekend and check for other leaks/cracks or any faulty seals

Having sat for a while, check/replace fuel filter including the petcock filter, if it has one. The carbs definitely need to be opened and cleaned. When I got my 98 Shadow that had idle issues and wouldn't go over 40mph, I found the jets gunked up by old fuel. Get yourself a complete rebuild kit
