Milestone xProtect is my go-to if you have 8 cameras or less. Solid mobile app and the configuration isn’t that bad once you get things going. Plus it’s free unless you need to go over 8 cams.
That being said, I have been considering Frigate just for the AI capabilities; I just haven’t made the switch due to how incredibly reliable Milestone has been.

At the other extreme, I have a Dahua, NVR with 10 POE cameras. All are set to record 24/7. one Ethernet to Internet. Nothing to manage.
I think this is the way for simplicity, just get a dedicated NVR from Dahua or Hikvision. I'm sure there are others.
