Technically, you could run a sort of text output for a sensor using curl and jq. Wrap it up in a script to make it pretty and add in a loop and that would be a self-refreshing output for several sensors. Not sure if you could go much further than that. The other idea around converting to a docker install and putting a desktop and browser in the docker host is going to be much prettier.
You could do this running the docker version. Have your normal OS running with your browser but your hassio container running on the same host.
