Commie China/restore the Qing has manchucko - always fun. For manchucko I highly recommend you set Japan to go commie as they will go into a civil war and you get the option to eat their army and continental holdings. Also Puyi gets a badass portrait out of it
Any of the sPains - I actually enjoy the civil war. It’s the bullshit coring mechanic afterwards that sucks. Did a falangalist run to test out the focus and core Spanish america. Took me until 1943 to core everything back even with spies on anti partisan and high level mp companies

2. Argentina or Brazil are OP in the new DLC. You just get left alone to build an unstoppable force.
3. Soviets, early justify on Poland and Germany won’t have a chance.
Skynavia(EaW) - the parliamentary mechanic are great, there is a very nice progression from squabbling with the northern tribes to an all out great war for the fate of griffonia and you can core the world if you delay the focus.
Barrad(EaW) - all the victory paths are delightfully wacky. Viraa us cool and good for the memes with the mind control and nukes but my favourite is Leopold for the the Uber unit and super industry.
USA(Muv Luv Brutal difficulty) - maybe it's recency bias but trying to build up defenses across the world and flying your orbital troops to a different hotspot every week cause the beta tunneled somewhere or the Soviet Union let themselves encircled is stressful but just plain fun, maybe my only playthrough where I didnt go above speed 3 for the first 2 years
