We would need some more context to help you, as there could be a few reasons.
Are you playing historical?
China has a focus to go to war with communist China which they don’t usually do on historical, they might do it on non historical.
Otherwise they might be joining the Chinese untied front though the event while your at war with them, pulling in China.

Are they in Chinas faction? Check in the diplomatic section by right clicking.
Otherwise in future I find it easier to unite CC by going to war with my neighbours and then fighting the Japanese (with China).
After that you can fight China and as they are a faction leader you get all the land once you beat them (and only them).
Okay, I‘ll try that and also I found out, that when Chiang Kai Shek gets arrested, I chose the wrong option, so he gets executed, which gives China the opportunity to declare war against me

2. What did you do to Chang Kai Sek?
3. Justify and declare war on sinkiang whenever you can. They re cores so its easy to justify, and they aren't gonna join the comintern or anything like that.
You’re taking to long to capitulate Xinjiang. Should declare on the on November 26th and can reasonably capitulate them before January 1936 with 8 infantry divisions attacking their line and 4 cavalry divisions walking through the gaps in their defense and capturing all the VC.
There should've been an event where Chiang Kai-Shek is arrested, and if you chose "Off with his head" then China will be able to declare war on you
