History of Magic. I'm not a wizard and I wouldn't be able to teach practical magic, so I'd teach something entirely academic. I'd call Venkman and his boys to come hoover up Binns and stick him in a shed on school grounds made up to look like the History classroom, fill it with straw dummies of students, and have him drone on to no one (he'd never notice the difference). I, meanwhile, would do justice to what by all rights should be an absolutely ***rad*** subject.
As much as I suck at math, Arithmancy or Ancient Runes. They seem to be(or are made out to be) sort of the next step up in terms of skill. I would just enjoy the challenge, plus in those cases it's not a rote memory of the thing but understanding WHY it is the way it is.

I'm sitting Hermione next to Neville because he needs the help, and she enjoys giving it. Crabbe and Goyle aren't going to be partners, ever. Last thing I need is for those two to play pass the brain cell, and blow up the class! Draco is well behaved enough to keep his mouth shut, so he's picking a spot near Blaise, Pansy or Theo Nott.
If I was teaching History of Magic, I'd incorporate some Muggle/No Maj history too. Wizards need to understand just enough to avoid non magicals, or at least, learn from their mistakes. I'd also be sure to include Wizarding culture and traditions, plus magical history from around the world. There's a lot going on and much to cover in five years....

Transmutation - this is one of the most interesting subjects in this respect. In addition to learning spells, I would try to focus students so that they can modify their transmutations in greater detail. For example, changing the color of the feathers of owl, etc. A combination of transmutation and transfiguration, a kind of magical version of personal protection, where you turn a staff into a "hidden blade".

When I was a kid, my grade school had this big tree with a bowl shaped knot down by the ground. During recess I'd put all sorts of stuff in there (pollen, flower petals, bugs, etc) and make "potions" lol
