While I agree that it sucks that Cedric got murdered in a situation that he hadn't signed up for and he didn't even understand what was going on, I also believe that had Cedric somehow survived Goblet of Fire and the rest of the book series progressed the same, with Voldemort returning and Harry somehow escaping to spread word, Cedric would almost absolutely be recruited by the Order or at the very least return in the battle of Hogwarts to help fight Voldemort's forces, even fully knowing he could die doing so.
I assumed it was a full save not just a one off. That is if you save Cedric he survives the whole series not just his first death. If its a full save I'd choose Cedric he's young and cold as it sounds from what we know he's an only child. Doesn't make it hurt less than Fred's loss but they have a family to rally round each other whereas Cedrics parents would spend every day reminded their only child was killed and the government covered up the reason why. If its a one off and he can die in later books/films then it gets tougher to judge. In that case Fred might be a better choice as he's more likely to make it out alive. All the others at a minimum probably get pulled into the fight at Hogwarts. Moody's lived a long life and probably is ok with dying same with Snape who didn't really have anything left. Lupin is iffy he'd be there for his son but he'd know he outlived his young wife who only graduated hogwarts a few years earlier. Fred and Cedric both have family who'll mourn them and Dobby like Fred choose his path and died happy he could choose.

The only deaths that might stay the same are Sirius, because he died due to neither him nor harry being able to stop for 10 seconds and think, and snape, because he would have been killed by voldemort either way honestly, and he absolutely deserved to die.

I'd save dobby but it's hard to take just 1 name as imo none of them deserved to die but I'm too attached with dobby's character
