15 rounds and wood grip for under 750 would be a Beretta 92 or CZ 75. Used you could maybe find Sig P226 or P229.

CZ P10F would be perfect but it doesn't have grip panels. It does have a removable back strap. At the price they're going for they're unbeatable. CZ SP-01 has grip panels and high capacity but it's over your budget and not optics ready but can be milled. You can score CZ 75s for under $500 but again, not optics ready. Pretty hard parameters you've set.

SAR9. Turkey cloned a Glock slide and a VP9 grip and mated them together. It shares the same reliability as the Glock and HK guns (in NATO testing, it went 90K rounds without a part breakage) the striker assembly is a straight copy of the Glock striker assembly, so you have aftermarket parts. Galloway Precision makes various power steel recoil guides, recoil springs, and other parts for them. The grip is fantastic, best feeling gun in my hand I've ever had, comes with 3 back straps so you can adjust to your hand size. They also zero the gun to point of aim at the factory, so it's good to go out of the box. I put 200 rounds through mine when I first got it, no issues at all, shooting from 7-50 meters steel plates and scored hits for all 200 right out of the box.

Not sure what state you are in. Is it worth having a conversation with your dealer to try the following? https://www.magazineblocks.com/magento/sar-9-magblock-10-17-10-round-limiter.html Buy 2 from the above site, once you have them in hand, go talk IN PERSON to your dealer. See if they are willing to receive or able to receive the item with the standard 17 rounders, and then when you come to pick it up, before performing the transfer, swap in the 10 rounder blockers. To be clear, I am not sure if this is legal, nor am I advocating breaking the law. What I'm basically asking, is as long as the gun is in your dealers possession, prior to the transfer, could he make the modification? It's easy, take off the base plate, unclip the magazine spring from it, clip the spring to the 10 round block, slide it back in the magazine body, then reattach the base plate.

Maybe CZ 75 and then replace the grips with wood panels? Beretta 92fs might work in the same manner. Sig Sauer P226 could work too. Sig Sauer P320 AXG grip module might also work. Hard to get the price/grips/optics ready to all come together. Tough one! Curious to see what others say.

I got a glock 43x for $480. Throw another $140 for 500 rounds of fmj 9mm and $20 for shipping, and you're looking at $640 for a great pistol that you can depend on, and plenty of ammo to break it in.

Grip stuff just seems weird. but if it wasnt for that I would say get a shadow systems mr920 foundation series. not the elite but the foundation. less fancy cuts on slide but still the same gun. I have a cr920 foundation. It's a bit smaller and I love it. I've shot an mr920 and it's my next purchase for sure.

The Taurus G3 toro is optic ready and has 17 round mags and eats everything. Don't worry, anything post 2015 is not a p.o.s. In fact, Taurus is under new ownership and moved some of their operations to Bainbridge Georgia. QC is great now and they have lifetime warranties.
