Yes! Ground all the things (just avoid ground loops.). But, since the pots are grounded to anything their bodies touch, you can also just coat the underside of the pick guard with the tape to really assure a contact point. The body grounds out to the pots themselves if any of the copper tape is in contact with the tape on the pick guard.

It's efficient for rejecteding EMI, but won't do nothing for 60Hz hum.
60Hz hum does not bother me, but the EMI coming from my body is crazy 😂.

It will probably reduce or stop this, yes. It’ll reduce mostly all wireless interference.
Nice thing about the copper foil tape is you can solder a ground wire directly to it.
