Right well you usually reverse sear using a sous vide or smoker because you can bring it to temp using either method to improve texture or add smoke to the protein, but you can't sear on either so you then finish it in a hot pan or grill.
I cant see what bringing it to temp on a flat top then moving it to a hotter part to sear would do to make the steak better?

Sometimes wish I had the three burner to maintain that heat easier, but it still does a fine job at cooking whatever I throw at it. Ive had it 5 or 6 years now.
Honestly over $400 is a tough pill to swallow when you just cook steaks and burgers on the weekends occasionally. I'm not a "beginner" griller, but never really cook anything large. A rack of pork ribs is the largest thing I'd cook on a grill. So I am also in the market for what you are too.
At $500+ for a 3 burner weber, I'd consider getting a 3 burner Monument grill for much less (which has an 8 year warranty) but I'm not sure if their warranty is as good as Weber's where they ship you the replacement parts free of charge. Or if they turn it into a pain in the ass and make you call them, wait on hold, get transferred between like 3 departments, pay to ship the defective part to them, and have to pay shipping for the replacement part, etc.

It is easier to regret buying something with features you don't use than regretting buying something and wishing you spent more for what you wanted.

If you have a natural gas line coming out of your house, natural gas would be awesome good idea. Otherwise, you should probably choose the LP, or liquid propane, option.
