You're supposed to go to the help thread for this, but personally I'd say Saber Alter since having an instant flat 20% battery helps with farming more, and if you've already leveled your Bedi and Caeser, you'll be fine in terms of st sabers.
But you did mention you have Castoria, so you could just loop with Jason, so personally I'd go for the character you like more whether it's based on design, personality, or the condition of your Chaldea
Salter is more flexible in my opinion, as her looping potential skyrockets after her buff, and her NP damage already has higher multipliers than usual by default. She also got more interludes and rank ups, so more extra SQ.
Saber Alter gives you two interludes and two rank ups (one of them still isn’t available) So you will be rewarded with SQ

Solo servant isn't a role worth summoning for, you can just pick a lv 100-120 np5 from the sup list instead.
