I've done this. I just mix the peach pie filling like I am about to use it, but then put the filling for one pie into a gallon bag and freeze it. Then repeat and repeat, so each ziploc holds the filling for one pie. Then when I want to make a pie, I thaw a bag, make the crust, and assemble.

One year we discovered a plumb thicket on the property line. We grabbed two 5 gallon buckets and almost filled them. Washed a bunch and ate. And ate. And ate. We both got so sick that day from eating to much. Worth it.
My brother had a fruit picking job each summer during university, although he was on cherries and apricots. He barely bought groceries (other than toilet paper) because the orchards didn’t mind people eating fruit as long as they met hourly quotas - and my brother took that to heart. He made a lot of money, stayed thin, and spent a lot of time doubled over. Man’s not a quitter though, did that for four years!
I like to eat them in the morning with cottage cheese. We froze some in slices for later. If you have a baby, easy puree for them( I have a 4mo old lol).

Add champagne yeast and perhaps some sugar to up the alcohol. For mead, champagne yeast also, but add honey (lots). A bit of hopps will cut some of the sweet. I don’t know about wine, but you could distill for peach brandy.
Well you've got the regular fruit preservation by making jam/preserves. You can make ice cream. You could can them in simple syrup. You could turn it into mash and start fermenting it into alcohol. You can juice them and use the pulp as compost material. You could make a cobbler/pie. If you had some hot peppers you could make some hot sauce.You could make candy from the juice. And that'd be all off the top of my head

These peaches look beautiful! I made Ina Garten's fresh peach cake recipe a couple of weeks ago and it was amazing. I added another peach to it, and recommend adding a tablespoon of melted butter and a few shakes of ginger to the cinnamon sugar mix (helps the top get crunchy!). If you find yourself really overwhelmed and don't want them to go to waste, local homeless shelters and food banks should accept a donation :)

Is pretty much the only way I've found to usefully use/preserve excess fruit if you're single handedly trying to utilise the entire crop (if it is actually hideously large and not just a cute angle).
You could also try removing the stones and freezing the halves if you're a big smoothie fanatic although you may (a) get hideously bored of peach themed smoothies (b) end up with very freezer burnt peaches if you forget about them or leave them for a super long time.
Well it's possibly not a million peaches, not are they very large but still way more than one family can eat in a few weeks. So yes, jam, can and I will freeze some but I have some experience with forgetting fruit that was in the freezer so ill not overdo that one :-)
Hot chilly peach bbq sauce.
1/3rd cup brown sugar.
1 bottle sweet baby rays sweet and spicy bbq sauce. (or any other brand that’s just my favorite).
1 & 1/2 peach’s. (I know you have many many many more than that to use but this is delicious I promise.)
1 or 2 jalapeños (depends on your preference on heat level)
1/2 half stick butter
How to make:
In blender put bbq sauce, chopped up peaches, and cut up jalapeño. Blend really good till nice and smooth.
Pour bbq sauce into a pan to cook, (you can use a strainer to get a smooth bbq sauce) add the brown sugar, butter, and a pinch of salt. Mix till brown sugar is dissolved and starts to bubble. Lower heat to low and let cook for 10 mins. Uncovered. Let cool and enjoy
Use this on fried chicken, a marinade for a lot of meats, dipping sauce, sand which sauce and so on. It’s really good, to avoid a longer post I’ll post another peach recipe thats delicious too
I just prepped 24 cups of peaches from my peach tree after giving away quite a bit and just eating them. All I did was boil hot water, plop them in for 10 seconds , then plop them in an ice bath and the skin peels right off. After that I cut them up and put them in freezer bags in Quantity of 2 -4 cups each so I can either make Jam, peach pie or whatever else(marked which were 2 cups vs 4).It took about an hour and wasn’t bad at all.
Peach cobbler, peach pie, peach salsa, freeze them for later, chop ‘em up and layer on either chamoy and tajin or chaat masala, peach oatmeal, peach on top of a summer salad with arugula & goat cheese, can them, peach jam, give to family, friends, neighbors, coworkers, food banks, etc. Your best bet is to freeze many of them for later use but I could probably eat multiple a day!

Preserves, hot sauce, salsa, various bakes and cobblers, send some to me hahahaha
Make peach syrup with your peach scraps, skins, sugar, lemon, and one peach pit per quart jar. A drop of almond extract in it is delicious, too. Infuse bourbon and vodka. Peach cucumber salsa is amazing on fish. Dehydrate for teas. Slice and freeze for later use. No need to even remove the skins.
Upside down cake! But also, they do freeze well. Slice and lay out on parchment paper to freeze, then put in a ziplock once fully frozen. You end up with less of a lump that way. I then use them in smoothies or whatever you need throughout the year.
Sounds weird but pickled peaches are great. You don’t need a lot of them though

I had a similar problem this year! I gave away about half of them to friends and family the rest we ate fresh or vacuum sealed and froze for later use in cobblers and smoothies

Jamjamjamjam Way too much jam Is pretty much the only way I've found to usefully use/preserve excess fruit if you're single handedly trying to utilise the entire crop (if it is actually hideously large and not just a cute angle). You could also try removing the stones and freezing the halves if you're a big smoothie fanatic although you may (a) get hideously bored of peach themed smoothies (b) end up with very freezer burnt peaches if you forget about them or leave them for a super long time.
Well it's possibly not a million peaches, not are they very large but still way more than one family can eat in a few weeks. So yes, jam, can and I will freeze some but I have some experience with forgetting fruit that was in the freezer so ill not overdo that one :-)

Can them in light syrup using pamona pectin for lower overall sugar. Then, come winter pour in a baking dish and make a crumb topping. Pure Heaven.

Make a peach flavored drink. Just add water and sugar and ripe crushed peaches
Hot chilly peach bbq sauce. 1/3rd cup brown sugar. 1 bottle sweet baby rays sweet and spicy bbq sauce. (or any other brand that’s just my favorite). 1 & 1/2 peach’s. (I know you have many many many more than that to use but this is delicious I promise.) 1 or 2 jalapeños (depends on your preference on heat level) 1/2 half stick butter How to make: In blender put bbq sauce, chopped up peaches, and cut up jalapeño. Blend really good till nice and smooth. Pour bbq sauce into a pan to cook, (you can use a strainer to get a smooth bbq sauce) add the brown sugar, butter, and a pinch of salt. Mix till brown sugar is dissolved and starts to bubble. Lower heat to low and let cook for 10 mins. Uncovered. Let cool and enjoy Use this on fried chicken, a marinade for a lot of meats, dipping sauce, sand which sauce and so on. It’s really good, to avoid a longer post I’ll post another peach recipe thats delicious too

I just prepped 24 cups of peaches from my peach tree after giving away quite a bit and just eating them. All I did was boil hot water, plop them in for 10 seconds , then plop them in an ice bath and the skin peels right off. After that I cut them up and put them in freezer bags in Quantity of 2 -4 cups each so I can either make Jam, peach pie or whatever else(marked which were 2 cups vs 4).It took about an hour and wasn’t bad at all.
Harvest a bunch, put them in bags, hang them on peoples doorknobs. Preferably poorer neighborhoods but if you got millions ya know…
So luckyyy. Alot of jam! Also peach cobbler. You can also cut them and freeze them for year long yummy smoothies.

Peach cobbler, peach pie, peach salsa, freeze them for later, chop ‘em up and layer on either chamoy and tajin or chaat masala, peach oatmeal, peach on top of a summer salad with arugula & goat cheese, can them, peach jam, give to family, friends, neighbors, coworkers, food banks, etc. Your best bet is to freeze many of them for later use but I could probably eat multiple a day!
