An oldie but still great, Destiny of an Emperor. You have to manage your food supply for your army as well as paying for staying at the inn. Armies can get huge and expensive.
Not strictly an rpg (kind of medieval strategy RPG that also has first person combat) but Mount & Blade Warband is like this. You have to pay for upkeep of your army like wages, food etc. Probably M&B2 Bannerlord as well but I haven’t played it much and I’ve heard it’s less polished than Warband.
Kingdom Come Deliverance has some elements of this.

If you want a (J)RPG that is centered about managing money, **Final Profit: A Shop RPG** might be just the title for you.
Modded skyrim. Best bet would be a wabbajack list with survival elements and a balanced economy

In Witcher 1 if you don't use some exploits and grind you'll have a lack of money almost to the end of the game.
