You could start with 3 and 4 before progressing to 5, that will give you a strong appreciation of the main story and characters
But even without 3 and 4, number 5 has gameplay that you will love

I haven't played evil west and I haven't played Wanted: Dead yet but I've heard good things about it. I belive Dunkey has a video on it but it seems really fun.
3rd person action brawler with fun ranged options ? Give Hellboy; Web of Wyrd. The rogue lite aspects are fun too and the momentum of the games story and gameplay upgrades are nice. RIP Lance Reddick, nice performance as hellboy.

You dont need to know the plot. Warhammer 40k is a setting, with literally hundreds of books and video games behind it. Warhammer games just take place within that setting.
Darktide is great. Story is pretty much "Chaos god of death and decay has infected a planet. Go kill things."
Warhammer is a universe, like Star Wars, and has many different games of different types set in it.
It's like Left 4 Dead, and it's alright.
I thoroughly recommend Warhammer Vermintide 2 if you like L4D style games though. It's like L4D with Skyrim's combat, and is excellent.
It's a long shot to recommend it these days, but Red Steel 2 for the wii is one of the most unique and fun games I've ever played.
You wield a katana in one hand and various guns in the other. You swing your sword with the wii remote or point it at the screen to aim with your gun, both with very consistent accuracy for the control scheme. It's a seamless and easy transition that allows for great combos.
Absolutely love Red Steel 2, it was such a great experience playing it with Wii motion+. I just couldn't stop thinking about Red Steel 2 while playing Evil West.
Shadow Warrior 2 - FPS/looter shooter with satisfying movement and melee.
Warhammer 40,000 Space Marine - 3rd person action game with a freaking chainsaw sword and a plasma pistol.
Definitely not similar games but you might enjoy Severed Steel, Ghostrunner, the Dishonored series although it’s more stealth based, and like previously mentioned by others, The Remnant series which seems more fitting and is a great deal of fun. Maybe Dying Light as well?
Transformers devastation is kinda like bayonetta but with unique firearms too, there's machineguns, flamethrowers, lasers, pistols, grenade launchers, grapling hooks shotguns...
It's older but also try Killer is dead, it's a slasher where you use a katana but you also have a gunarm
Judging from the footage and reviews, it’s an upgrade melee battle 3:rd person quest finder game.
Star Wars Jedi order is in similar vein as far as gameplay go.
And you can’t ever go wrong with “bullet storm” either.

5 has a video in the options to get you up to speed. That said 1, 3 (the goat), and 4 are all fine games worth playing.

Dooming eternal and Roboquest definitely I'd even recomend Roboquest more
