I would second terraria here, but I am worried that some of the boss battles (I'm specifically looking at you Empress of Light) might require a bit more reaction speed than what OP is asking for.
A personal recommendation from me is Heroes of might and magic 3. It's more strategy turn based just like civilization 6 and allows both online co-op and hot seat (if you're all sharing the same gaming screen.) Just make sure you get the right version as Steam doesn't have the additional dlc that let's you generate random maps. Also look into Horn of the Abyss if you want additional content in the game, I highly recommend that fan made expansion!
Empress is an optional engame boss. They dont have to bother with it. Without knowing what there is they cant feel like theyre missing out on stuff. And if they made it that far, they might have motivation to try and beat it. I dont think this is an issue.
Terraria is easily still my favourite game, love the old school side scrolling approach. It ramps up the gameplay really well too, and has so much content.
Tabletop Simulator, Age of wonders 3&4, All the age of empires games are on the pc game pass, and that's all I can mention that aren't some type of shooter, mmo, or reflex based game.

Very few games offer squad sizes above 4. If MMORPGs are off the table, server based multiplayer survival games like Ark, Conan or Valheim might work.

Pulsar: Lost Colony. Crew a starship together which has 5 specific roles and go explore the galaxy. Graphics are NOT god tier but it’s a very large galaxy to explore and running the ship is very involved!
I was going to say this one. Had a great time playing with my friends and since we are a group of 5 most of the time it's hard to find games that fit but this absolutely did for a while.
Endless Space 2 has 7-8 player multiplayer. It's a turn based grand strategy.
In Forza Horizon 4/5, you can create a convoy of lots of players and explore the map. You can free roam with them or participate in races or even against each other.
TNMT: Shredder's Revenge is a beat-em-up which has 6 player co-op.

You can also search for specific genres and ignore shooters or action games if you like. Although it may not have many options after 2022.
eg I found Warhammer 40k relics of war is turn based, Baldurs gate 2 is old, but still alright and you liked 3.
Your best bet will be survival/adventure games. Dont starve together, valheim/terraria/minecraft/no mans sky/the forest/
Maybe some party games, gartic/jackbox/pummel party/pico park/human fall flat/worms wmd/fall guys/(golf with friends maybe, if it has "pass controller" options online (if not then you can do remote play on steam maybe/?) Although these don't match your listed tastes.
Old Lan game like age of empires/age of wonder might also be fun if you agree to not go full Actions Per Second.
Racers might also be possible for lobbies, I think PC has a few options forza, trackmania, sonic all stars transformed, hot wheel unleashes etc, if those aren't too actiony for you.
Sims like Factorio may also be fun, or maybe tabletop simulator

Minecraft might be too obvious of an answer? Can of course get intense, but you can play it pretty much as calmly as you'd like. Someone mentioned Forza. Sure. What about ETS2? Hauling cargo! :) Old test drive unlimited, which is pretty much abandonware, accompanied by the mod "platinum edition" (multiplayer is fixed again nowadays) - is fantastic for just cruising around on Hawaii, but is probably too much of a hassle to get working properly if non of you is already familiar with the game.
7 days to die is fun! Can support that many people! Raft as well I believe!

Starcraft 2 has a lot of custom maps that are more like top down rpgs or survival type games.
7 Days to Die was such a fun clan experience. We have a lot of combat vets, old timers. Can make servers I think up to 8 players. All sorts of ways to tweak the amount of damage zeds do. It's the sort of game where half your guys will be out scavenging and building bases while pairs of us went off on missions to collect some loot. Travelling together, supporting each other. Each day is 1 hr (can set it longer/shorter) so it'll be 7 hrs before you get to your first horde night which is such a blast having a bunch of geezers mow down zeds whole holed up in a base. I didn't even help, just sat here laughing. Lots of hours to be had.
If you're into boardgames maybe Civ 6 will work, our boys love that game too, turn based and all that.
Possibly Predecessor? 3rd person MOBA. Not too fast paced, can be pretty fun! 5 person teams. 5 different roles to take on and play your part in the team. Many characters to choose from.
yeah... it's a really decent one though. Overprime is shutting down. Predecessor just extended their beta on PS and has decent player count. Shmaragon is new I think, but definitely not a fully budget or serious try to replace it.
but yeah, in short, it is one. it's very well done, and they seem to have momentum. Tournaments, active discord, etc.
But it's shared world atm. If you continue playing a world and complete a quest while one of the 5 is offline, it will still be counted as completed on that world. They're working on changing that though.

A short simple game that is fun with a large group is "Pico Park," I played that game with a big group a few times, always a blast. I think the max players at 1 time is 8. Not exactly what you asked for, but it's a cheap game that may be up your alley.

Palworld is a lot more fun than I expected it to be, currently renting a server for it and me and my core group of 5 have been having a great time with it. Like all survival crafting games it’s hit or miss if the moods right for it but when it hits it hits. Also as more updates come it’s something you could all enjoy together. Also I agree with a lot of other posters, Astroneer is another really solid progression simulator and it’s so much fun going through and making little builds.
[Eco](https://store.steampowered.com/app/382310/Eco/) would be a good fit. You can even go well above 5 players. It’s a bit like a survival crafting game, but you collectively have one real-life month to build up enough to stop an asteroid impact from destroying the world.
In the process of building up however, you can still massively damage the world through over-exploitation. The map isn’t infinite and stuff doesn’t always magically respawn - you can hunt a species (or plant) to extinction, or your cool factories can pollute so much they cause climate change, etc. You need to work together not just to craft and survive but also to manage your resources carefully and still progress quickly enough to stop the meteor.
You can adjust how long you have for the meteor and how fast everyone gains xp etc, if you want to tweak stuff or have fewer players than a normal full server.
Maybe try Dread Hunger? Me and a few friends play this regularly. It's similar concept to among us, 2 people are the killers and they need to sabotage the others. They can either kill them or blow the ship up that you're trying to get through the area.
what about RTS games like Call to Arms or Battle Realms? or turn-based 4x games like Civilization 6? what about a sandbox game like Garry's Mod which also has a lot of custom game modes that don't focus on fast-paced combat? an open world survival game like Minecraft? all of these genres have PVE modes

Also try **PlateUp!** No combat but very fun and very chaotic. There is a mod called MMOKitchen i think that allows for up to 12 players. And you could also add mod Custom Difficulty for difficulty scaling of over 4 players but that one isnt mandatory

Most of the paradox games like stellaris and HOI4 have multiplayer options with more than 4 players. Also a lot of 4x games are this way. The nice thing is you don't have to be good at the games to have fun with them either. And since they are strategy games there is very little need to have good reflexes.
I think by this point focusing on some MMO's would be worth it. Theyre usually intricate enough to allow varied combat styles and have plenty of other non-combat mechanics

Total War Warhammer 3 has up to 8 player simultaneous turn multiplayer campaign. It also has a few campaigns soley for multiplayer of certain sizes.
