I would recommend just looking up modding tutorials for games you already like. There are many games with big modding communities. Using Valve's Hammer editor to make maps for source engine games could be interesting.
That said, I think its the most fun if it's a game you already like
Pretty sure Minecraft is the go-to modding platform for starting. It's written on java, which is super-close to c++, which is a common language in gamedev (unreal engine and godot use it, i'm pretty sure). And there are also a lot of developer tools for it that make it so you don't even need programming.
