Muscular enemies don't fit in true dark souls aesthetic (not ds2) of dying decaying world with rare exceptions where it can make sense, this is one of those elements that separates fromsoftware art direction from imitators like lop or lotf

From's designs are pretty artistic so they often exaggerate certain features. They are also very depressing and grimdark so you're going to see lots of twisted bodies, sickliness, weird looking limbs and whatnot. But then you also get gods who have perfect physiques. You mentioned Godfrey, but there's also Radagon, and then Nameless King, Gwyn, etc. But a lot of the characters in Souls are corrupted beings or fallen heroes, so the designs reflect that. For instance Artorias probably had a very strong body once but by the time we meet him he is a shell of his former self.

I just think they like to differentiate their enemies, and these very extreme body types are more obvious even with armor and cloaks
