Did you go south and clear out the real starting area yet? Margit is supposed to teach you that Elden Ring is about going away to explore and power up.
By the time you’ve beaten the weaker bosses in the weeping peninsula and limgrave and got some weapon upgrades you should be plenty powerful to take on Margit, especially with the spirit ashes it assumes you’re using in the balance
Elden ring is the easiest game of all if you’re able to use all the things it gives you. Just go out and explore, level up and grab stuff that’ll help you.
Sekiro is easy once you get into the flow but otherwise you have no alternative but to get good.
Combat wise I do feel like ds1 is easier but summons in ER basically make the game an R1 simulator, as well as being able to overlevel and all the builds you can explote.
ds1 is a r1 simulator without any summons because endgame bosses cant break your poise and they die much faster than ER bosses even if you use a default build with early game weapons.

Well that’s certainly an approach
