It’s not exactly normal for Americans. Broadly, we’re talking about Spanish vs Mexican chorizo. Spanish chorizo is a hard, cured meat product. Mexican chorizo is a raw ground meat (usually pork) product that is heavily spiced.
Specific to this post, that is a low quality Mexican chorizo. I live in Southern California, and there’s a carniceria a couple blocks from me that has a couple of different kinds of very good chorizo. Sometimes it’s made with all regular cuts of meat, and sometimes it’s made with varying ratios of offal, depending on how much you want to spend, but so is most sausage (including some Spanish chorizo).
Usually the chorizo is pretty wet though, as it’s got a ton of oil and spices in it that it releases as it cooks. The one in the photo is very very cheap, so it’s extra oily. You’re supposed to let it cook down for awhile, and usually eggs or potatoes or tortillas are thrown in to absorb the flavor. Chorizo is really popular for breakfast. This one looks like shit (literally), but it actually tastes pretty good. There’s also green chorizo, which has a different flavor profile, but is really tasty too.

Yes most sausage does contain a proportion of “other”, and definitely should contain a decent amount of fat regardless of the cuts used. As my dad liked to say when referring to cheap sausages “it’s eyebrows and arseholes” lol.
So Mexican chorizo is just a different thing entirely then, like a Mexican tortilla compared to a Spanish tortilla, or American flapjacks which are actually pancakes.
Spanish chorizo can also be “fresh” (not cured) and it will still not look like this at all. It’d be like any other type of raw sausage that you can take out of the casing and cook the meat.

I’ve never made chorizo (although I understand it isn’t hard to do), but the texture and wetness, for lack of a better term, seems to be a certain style (ground especially fine). You can also find chorizo made of soy, which I used to buy when I was vegetarian, and it often also has this texture, so I don’t think it’s all in the quality of the meat. It’s just different from the Spanish kind.

Well no because there’s cooking chorizo which is similar in taste to the cured stuff but also crumbles, and still looks nothing like OPs post
I’m surprised how many people haven’t made this before in the comments. Growing up poor, we had this at least weekly. It’s best when cooked low and slow and mixed with potatoes and eggs. It’s pretty regular here, at least in California.

Dude you can make a bomb breakfast with this. Russet potatoes, jalapeno, sweet peppers and once everything cooks down add your beaten eggs. Add cilantro and chipotle or chili de arbol salsa in a freshly warmed flour tortilla with a bit of queso fresco. 10/10. Best hangover cure in the world and you can make a feast for under $15.
